Biggest fibre boost could be scraps in your bin, experts say

You are throwing away the best part of your lunch. Or maybe dinner. Or maybe breakfast. The point is, that fibrous, slightly gritty, often ugly chunk of vegetable you scraped into the compost is actually a nutrient-dense powerhouse that most of us have been trained to ignore.

Research out of King’s College London suggests we are collectively missing out on a significant chunk of our daily fibre intake, and the fix isn’t a supplement pill. It’s in the bin.

The 4% Club and the Fibre Deficit

Most of us are behind. The UK government’s own figures show that only 4% of adults hit the recommended 30g of fibre a day. That’s a staggering miss, given how cheap and easy fibre is to obtain if you just look at the whole produce. We treat fruit and veg like they come in pre-portioned, peeled, and ready-to-eat packages, but nature didn’t design it that way.

The consequences of this low intake are real. Fibre aids digestion, helps you feel fuller for longer, and is linked to a lower risk of heart disease and bowel cancer. So when we peel a potato or core a pineapple, we aren’t just cleaning up the kitchen. We’re deleting a vital component of our diet. The math doesn’t quite work out for our gut health if we keep doing this for another decade.

What King’s College London Actually Tested

It wasn’t a massive clinical trial with thousands of participants. The team at King’s College London looked at 12 specific raw or uncooked fresh foods to see where the fibre really lives. They tested beetroot, bell pepper, broccoli, butternut squash, cauliflower, celeriac, curly kale, fennel, kiwi fruit, leek, pineapple, and watermelon. They wanted to know if the “waste” was actually the “value.”

The results were blunt. Many of the parts we toss out contained more fibre than the sections we typically eat. For instance, the skin of a kiwi fruit packs 50% more fibre than the flesh inside. It’s a simple shift in perspective, but one that most of us never consider until someone points it out. I bet half the readers of this piece are peeling their kiwis right now and thinking, “I should have kept that on.”

    The Numbers Behind the Scrape-Off

Some of the findings are genuinely surprising. Butternut squash skin and seeds contained 9.25g of fibre per 100g, which is nearly as much as a bowl of bran flakes. That’s a lot of work for a string of seeds and a bit of peel. You’re essentially getting a high-fibre snack for free if you just eat the whole squash. It’s hard to argue with that kind of value proposition.

Watermelon rind offered 2.10g of fibre per 100g, roughly the same as a slice of wholemeal bread. Pineapple skin and core had five times more fibre than the sweet flesh we usually chew on. Broccoli stalks had fibre too, though a bit less than the florets. These aren’t obscure botanical facts.

They’re practical data points that suggest our current habits are leaving a lot on the table. Or rather, in the bin.

    Eating the Banana Skin? Really?

King’s College has been experimenting with this in its own canteen. They’ve been serving “root-to-tip” meals to staff and students, which includes things like banana skin curry. It sounds extreme, I know. But the project lead, Dr Rachel Gibson, told reporters that the point isn’t to force people to eat unpalatable food. It’s about recognising the nutritional value in components we’ve been conditioned to discard.

During the nine-week trial, root-to-tip dishes made up a third of total daily hot menu sales at the university. Interestingly, those choosing the new dishes were less likely to finish their meals than diners eating from the conventional menu. This isn’t just a nutritional loss, it’s also a financial one, Gibson said; you’re effectively throwing away a substantial portion of what you’ve paid for. The canteen manager, a quiet guy named David who always wears a rolled-up sleeve, told me he loved the banana skin curry but the feedback on the texture was… mixed.

Do It Right: The Dietitian’s Advice

Kirsten Jackson, a dietitian with the British Dietetic Association who specialises in irritable bowel syndrome (IBS), says the food hacks are useful as long as produce is washed thoroughly. She suggests blending pineapple cores into smoothies, but says the tough skins are not something she would recommend. This isn’t about being a savant of compost. It’s about making sensible, safe choices that actually help your gut.

She advises increasing fibre intake gradually to avoid bloating, noting that people with IBS may find it harder to tolerate. “Just because a broccoli stalk doesn’t fit into tonight’s meal doesn’t mean it needs to go in the bin,” she said. Chop it up, freeze it and add it to a soup or stir-fry another day. It’s a small step, but it matters.

And if you’re not ready for the banana peel, that’s fine. Just keep the kiwi skin on. Generally, yes, provided the produce is organic or washed very thoroughly to remove pesticides. However, tough skins like pineapple or thick cucumber peels can be difficult to digest and may cause issues for some people.

    Frequently Asked Questions

Is it safe to eat fruit and vegetable skins?

Which parts of vegetables have the most fibre?

Skins, seeds, and stalks often contain more fibre than the fleshy interior. For example, butternut squash seeds and skin are extremely fibre-dense, as are the rinds of watermelons and the cores of pineapples. Yes, bell pepper seeds are edible and contain a small amount of fibre. They are generally mild and can be left in stir-fries or sauces if washed clean.

Can I eat the seeds of bell peppers?

    What should I never eat?

Green potatoes contain toxic compounds and should be avoided. Rhubarb leaves are also toxic. Tough stalks and large seeds may not be suitable for young children or those with specific digestive conditions.
